Peanut butter and jelly mousse domes! This is my f Peanut butter and jelly mousse domes! This is my first jump back into vegan pastry experiments since moving to Copenhagen in January. A creamy peanut butter mousse with a berry gel covered in a crunchy chocolate shell.

I love making desserts that totally surprise people when they find out it’s all vegan. Desserts without eggs or dairy don’t have to be boring “alternatives.” With a little bit of art and science, vegan desserts can be their own awesome and delicious category that rivals the traditional versions. Chocolate generally fixes everything, which is why I made this chocolate zucchini cake with a whipped hazelnut ganache. This cake is super packed with grated zucchini, adding moisture and a hint of sweetness.

Maple syrup, cocoa powder, espresso and hazelnut make this cake rich, creamy, and super flavorful while not going overboard on added sugar. Vegan, gluten-free, and SO good, zucchini might be my new fav over banana bread. Have you tried zucchini & chocolate? Tell me!
Vegan entremets are one of my biggest challenges. Vegan entremets are one of my biggest challenges. Traditionally, glazes and mousses are made with gelatin. Here, I used pectin for the glaze and a carrageenan blend in the mousse for stabilization. I’m still very much in the experimentation phase, but getting better every day!

I wanted to make something that celebrated fall flavors, so in this entremet I used:
* Vanilla sponge base
* Hazelnut mousse
* Green apple, ginger & cinnamon compote
* Pumpkin seed, sesame & maple crumble
* Pomegranate glaze

These vegan & gluten-free chocolate tahini oat bar These vegan & gluten-free chocolate tahini oat bars are like a cross between a brownie and a snack bar, perfect for any time of day. Drizzled with a tahini espresso caramel and topped with flaky sea salt for a crunch.  I love using tahini in my baking for an extra layer of flavor, it goes so well with espresso and adds a hint of nuttyness.
