with fresh apricot jam. I love this cake. Layers of cocoa sponge cake and apricot jam topped with a chocolate glaze.

I finally found some fresh apricots, so I cooked them down with sugar and added a little bit of pectin to thicken. Strawberries and cherries would also be amazing here! I adapted the recipe from @tonirodriguezlv

This was the second special request for @beppedej birthday. It was my first attempt at a laminated dough (let alone a vegan version) and the process was pretty messy. I honestly don’t even have pretty final shots to show you because it fell apart pretty quickly. Learning everyday!

The powder is a caramel that I hardened and pulverized. When sprinkled on top of the hot puff pastry, it melts to form a crunchy caramel layer.

with chocolate coffee glaze. This was a special request for @beppedej birthday! The criteria:
Gianduja (chocoate hazelnut)
Coconut
Coffee
A fruit
Something crunchy 
So this entremet was born with chocolate hazelnut mousse, passion fruit gel, chocolate sablé, chocolate coffee glaze, and hazelnut coconut cream.

Cutting it was messy and I’m still working on my layers, but it was super stable and delicious without using gelatin, eggs or dairy.

with blueberry glaze. The glaze is super easy, just blueberry purée mixed with powdered sugar. I used frozen blueberries for the vegan cake and the glaze. It’s a super simple and not too sweet snacky cake for anytime! 🫐
